First, I just want to say Happy, Happy Birthday to my handsome husband!! Thank you for everything you do for our family, babe! You are the BEST! (And I’m sorry we are doing Whole30 on your birthday but you are a champ for sticking to it!!)
We had such a fun, chill weekend and let me tell you how nice of a break that was. The past three weekends we have been stuck at home due to sickness and snow but this weekend we were all well and temps were in the 50s. Hallelujah. I had big plans to get out of the house and make sure we did all the fun things (before we get more snow again this coming weekend – eye roll) but really, we didn’t and it was still great!
Friday night we got together with our small group after a looong hiatus. It was so awesome being all together and catching up. We always do a pitch in dinner so I was nervous about sticking to Whole30 but it worked out fine! We had sandwiches which were easy to modify and I made this salad which seemed to go over really well! Saturday morning started bright and early with a killer OT workout. Due to missing a class last week when I was sick this was my third class in a week and WOAH, I’m feeling it today. #hurtstositdown
I was thinking we would go to the children’s museum Saturday morning but it was absolutely pouring when I got home so we decided to wait. Camden is obsessed with putting the k-cup in the Keurig and pushing the button for me. I have got to remember to pick up this Melissa and Doug one the next time I’m at Target. I know he would get such a kick out of it!
Procrastinating nap time by insisting he can “map” in his chair. Saturday was full of cleaning up the house, playing puzzles and cars, and meal prepping for our last few days of Whole30.
Do we think this kid likes to make himself comfy or what? Oh and if you guys need any parenting advice, I’m obviously your girl. #toddlermannersonpoint
GUYS. This boy is just a few months shy of being TWO. How does this happen? Also, how taught him that if he pulled a chair up to the counter that he could reach all the things? Oh wait. These things seem like a good idea at the time, I swear.
Saturday night we went to my mom’s house for dinner and it was ROUGH. Probably the hardest time I’ve had since starting Whole30 and that includes the time I went to my all time favorite Mexican restaurant and didn’t feel tempted in the slightest to eat even one chip. My mom made lasagna and garlic bread and the smells were just torturous. This whole weekend in general was really hard. Thursday is our last day and I’m ready to be done.
Sunday we got in some early morning snuggles before getting ready for church. I think we circled through eight minutes each of “Elf-eff” aka Sing (because of the elephant), “Dogs” aka Secret Life of Pets, and “Truck” aka The Magic School Bus. It blows my mind that he is so entertained by Magic School Bus. I have no idea what they are talking about 70% of the time.
A quick post-church trip to Petsmart for dog food turned into a long trip of wandering the aisles checking out all the animals. I’m pretty sure everyone in the store heard our son yelling “SHISH!” over and over and over lol. I have such fond memories of visiting the pet store (formerly) in our mall as a child. It’s so fun to experience the same thing with Camden!
After that we spent the majority of the day outside enjoying the beautiful weather! Cam was finally brave enough to sit on his bike and let me push him around. I love that this one has a handle that I can use to guide him now and it can be taken off once he can pedal on his own. Our neighbors came down for a little while and let Cam drive around their son’s motorized toy car. To say he was obsessed is an understatement. I see one in our future!
Oh yeah. We also finally took down our Christmas lights! Insert money covering his eye emoji here. #thosepeople
I made a super yummy Whole30 Slow Cooker Chili for dinner on Sunday! We all loved it – toddler and husband included so I call that a major win. I adapted the recipe (a lot) to our tastes but the original recipe is here. Here is what I did:
- 2 lbs. ground turkey
- 1 large yellow onion, diced
- 8 cloves garlic, minced
- 1 can diced green chilies
- 2 large sweet potatoes, peeled and cut into small cubes
- 2 14-oz. cans fire-roasted diced tomatoes, undrained
- 2 cups Whole30-compliant chicken or beef broth
- 3 Tbsp. chili powder, divided
- 2 Tbsp. ground cumin, divided
Brown turkey in skillet with the onion and garlic. Add 1 Tbsp. each chili powder and cumin a few minutes before it’s cooked completely. Combine cooked meat and all other ingredients into the slow cooker. Cook on low for two hours or until potatoes are tender. So yummy!
Sunday ended with the Grammy’s which I have to say I was not all that impressed with. Like, at all. I like James Corden a lot but I thought most of his jokes fell flat and the musical performances were just ok at best. Am I alone here?!
