The Best Simple Grilled Corn Salad

This is the best, most simple grilled corn salad you will ever have! So perfect for those summertime pitch-ins or as an easy side to whatever protein you are grilling!

To me, summer screams “EASY DINNERS” because who wants to come in from a long, hot day of fun (or work) and spend your evening in a hot kitchen? No thank you. Summer also screams “GRILL EVERYTHING” because well, everything tastes better on the grill AND you don’t have to warm up your kitchen. Amen.

I saw a version of this salad on my friend Emily’s Instagram Story a few months ago and immediately screen-shot it because it sounded so perfect! I have of course (in true Rachel fashion) tweaked it to fit our tastes and the results are amazing, if I do say so myself. Please tell me you all do this too! Add or omit things to a recipe based on your family’s tastes (or because, ahem, you forgot a key ingredient at the store). Most of the time this works out but admittedly…sometimes it does not, ha!

If you love bold flavors with not a lot of work, you will love this salad. If lots of flavor isn’t your thing, cut back on the amount of feta used and omit the red onion. Either way, I hope you enjoy this salad as much as we do!

The Best Simple Grilled Corn Salad

4 Ears of Corn
1 6oz. Package of Feta Cheese
1 Red Bell Pepper, diced
1/2 Red Onion, diced
1 Tablespoon Red Wine Vinegar
4 Tablespoons Olive Oil
Salt and Pepper to taste

  1. Grill corn for a few minutes on each side on a medium to hot grill. Turning once a few pieces on each side each side are slightly charred. It gives the salad GREAT flavor! Once it’s done, let it cool for several minutes then cut the kernels off using a long, sharp knife.
  2. While the corn is cooking or cooling combine diced onion, red pepper, feta cheese, red wine vinegar, and olive oil together in a large bowl. Once your corn is cooled and cut from the cob, add it to the bowl and add salt and pepper to taste!

If my husband liked tomatoes I would certainly have added some halved cheery tomatoes in here. Yum. Orzo would be amazing to bulk it up a little bit, too. So many options! Let me know if you try it out!
